Smoky White Beans and Spinach |

SERVING SIZE: 1 cup
PREPARATION TIME: 15 minutes
COOKING TIME: 20 minutes
Ingredients:
- 2 tsp olive oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 1½ tsp smoked paprika
- ½ cup dry white wine
- 1 (14.5-oz) can ire-roasted chopped tomatoes
- 1 (15-oz) can cannellini beans, drained and rinsed
- 10 oz baby spinach leaves, stems removed
- 1 Tbsp balsamic vinegar
- ¼ tsp freshly ground black pepper
Directions:
- Heat the oil in a large saucepan over medium heat. Add the onion and sauté for 5 to 6 minutes. Add the garlic and smoked paprika and sauté for 1 minute.
- Add the white wine and cook for 2 minutes. Add the tomatoes and cook for 5 to 6 minutes. Add the beans and cook for 5 minutes. Add the spinach and cook until it is wilted. Stir in the balsamic vinegar and pepper and serve.
